I just had to share this recipe I discovered a couple of months ago for a great Thai Kale Salad.
I came across this recipe online and it looked so good, I had to try it. And it`s been so popular with my family and friends , I`ve made it at least a dozen times since. It`s great for family get together or even as a pot luck dish.
It basically involves lots of fresh chopped veggies, including kale, bell peppers, carrots, green onion, cilantro, edamame and more. I also love the addition of cashews for extra crunch! Of course, you can omit or add whatever veggies you`d like because the real star of the show is this incredible home-made dressing!
The kale stands up really well to this thick dressing, so the salad doesn`t get soggy. This is one of the few salads that still tastes amazing the next day!
I`ve started making doubled versions of the dressing so we can have it one day and then have it again a day or two later. I just mix it all up in our Magic Bullet and leave the extra right in the cup so it`s ready for a quick pulse before using (the dressing is an emulsion so it can separate a little bit so it`s good to mix it up again before using).
Ingredients:
1/3 of a cup canola or grapeseed oil (something neutral, with no overpowering taste)
3 cloves garlic
3 tbsp soy sauce
2 tbsp water
2 tbsp white vinegar
2 tbsp honey
1 tbsp sesame oil
1 tbsp lemongrass paste (I`ve tried it with ginger as well, but didn`t like it as much)
Squeeze of lime juice (I like to add half a lime`s worth)
Just blend everything until it is smooth and creamy. It will turn into a colour similar to peanut butter - a lot of my family thought there was peanut butter in the dressing!
