Every Summer I get to enjoy lots of Zucchinis courtesy of my parent`s garden. I love eating them steamed along with other veggies, baked into a pasta, or even fried then topped with parmesan, but my favorite way to enjoy them are as delicious muffins.
Sure, muffins may not be calories friendly, but these are so good you won`t even feel guilty for eating them. Ever since I first made a batch of these for a BBQ I threw at my house my family has been asking me to bring them to every family BBQ.
This time I decided to not only grate zucchini, but carrots too. The combination of the two is incredible. This time I made them for my husband as a nice surprise for when he got home from work but I also gave some to our front door neighbors.
When I am too lazy to add the batter to cupcake liners, I throw the batter into a baking dish and bake it in the oven. As soon as its out of the oven and ready to eat I top them with powdered sugar for some added sweetness.
