I made a double batch of these zuchinni bites this time because they just went away too quick last time I made them. I have a small 12 piece mini muffin pan to make these so I made one batch and then had to wait until they were done to make another in the same pan. I know they make the 24 mini muffin pans but I don`t want to spend the money even though I do think I will be making these a lot more often! They only take 15 minutes to bake anyway so it isn`t that much time wasted by not being able to cook them at the same time. These really taste a lot like hashbrowns. I can`t believe something with so few simple ingredients can taste so good and be so healthy! It really is just 1 shredded zuchinni (squeeze out excess water), 1 egg, 1/2 cup bread crumbs, 1/2 cup shredded cheese and salt and pepper! Mix and put in the mini muffin pans for 15 minutes at 400 degrees.
