I love vegetables.... sometimes.
On a more serious note, I do enjoy being healthy though I do have MONTHS where I`m all about chocolate, candy, and everything bad for me (the entire month of October is Halloween, right?). The basics of healthy; produce, lean proteins, and whole grains, can get boring & repetitive which is why I love recipes. I found this beauty on tumblr, I`m not quite sure who posted it.
1-2 medium sized zucchinis
varied amount of yellow corn meal (or breading of some sort - NOT FLOUR)
1-2 eggs scrambled (The yolk is need for this recipe)
Sprayable cooking oil
Pre-heat oven to 350 degrees, Fahrenheit & slice the zucchini(s) into thick slices, look to photo for reference, and pat dry.
Dip zucchini `fries` into egg mixture, then into corn meal or breading of choice. Transfer to pan - I found that cooking mine on a wire rack worked best, I didn`t have to flip them half way through cooking.
Coat both sides of `fries` with cooking oil spray and bake for 20-25 minutes or until edges are brown and breading is crispy. Cooking time will vary depending on the amount of oil applied. Breading can also affect flavor and cooking times (bread crumbs tend to brown faster than corn meal would).
I`m a huge fan of spices & seasonings - they`re the base of many of my personal recipes, so before coating my fries with cooking oil, I added some spices and seasonings like freshly ground pepper, cayenne, and seasoned salt. I served mine with a spicy greek yogurt dip.
