This was such an easy recipe and I made these for lunch to go with my healthy salads I have been making, but ended up eating them for breakfast too! It is only a couple ingredients and SO easy! Shred one zucchini over some paper towels and squeeze all the water out. Dump into a bowl. Add 1 egg, 1/4 cup breadcrumbs, salt and pepper, 1/4 of a chopped onion, 1/4 cup shredded cheese. Mix it all together and pour into a mini muffin pan and cook at 400 degrees for 15 minutes. My husband ate one expecting it to taste like a tater tot, since that`s what they kind of look like, so I warned him and cringed as he tested them out. He really liked them and isn`t one to like his veggies! I ate them for breakfast the next day and they are delicious and really do taste like tater tots!!
