I decided for lunch I would be a little more healthy. So I added tomatoes to the eggs so I could make this dish healthy! :) I just heated up a small sauce pan and added extra-virgin olive oil and put in fresh chopped tomatoes. I used about half of a large tomato and I beat 3 eggs in a small bowl and after sauteing the tomatoes until they were fairly soft and glossy i cooked the eggs to my desired type of eggs! I personally enjoy them soft:)
