A new brand of veggie based appetizers hit shelves at my local grocery store and they caught my eye, so a box came home with me. Fried pickles (which also came home with me but I haven`t cooked them up yet), broccoli bites, zucchini bites, etc. I decided to heat up the zucchini bites because they sounded yummy and I wanted a little appetizer since I was hungry but not starving. I cooked these thru in the oven as recommended and when done served them with some fat free ranch dressing. I think these are actually quite stellar. The outside batter is crunchy, moderately thick and you can still taste the natural sweetness from the zucchini. I would rather a marinara dipping sauce next time since the ranch just wasn`t the perfect pairing -- but overall, I`d say these zucchini bites were pretty good!
