Are you up for trying anything just once? I sure hope so, because what I am about to tell you is how to make something really yummy! I know you may say "... but it`s just a quesadilla..". Yes, it is, but this is one that you must try. I know others are going to say "Well, those are not so good for you.." if you feel that way then please don`t finish reading this. So, lets get started...
Here is what you will need:
Shredded Cheese (I use Sharp Cheddar and Monterey Jack Cheese)
Cook the bacon so it is crispy (not so it`s burnt). Take bacon off heat (I used a griddle) and place on paper towel so the grease soaks into the towel. While the bacon is cooking, chop up the Cilantro, Green Peppers, Jalapenos and Red Onion. Once the bacon is cooled off crush it all up into little bacon bits. Spread a thin layer of butter on one side of the flour tortilla and place on the griddle/flat top butter side down. Take the Sharp Cheddar cheese (or which ever you prefer) and put a layer on one half of the tortilla. Then take some chopped up cilantro, green peppers, onions, jalapenos and bacon and "sprinkle" some of each on top of the cheese. Take the Monterey Jack (or which ever you prefer) and put a layer on top. Fold over the other side, let the cheese melt and then flip and cook on the other side. You don`t have to cook them any longer than 5 minutes, you can if you would like to.
I then cut the quesadilla into quarters and eat with Sour Cream. You can also have salsa, I don`t because I don`t like salsa like that.
