Yellow Split Pea Soup

Tonight I made one of my classic homemade soups and I thought I`d share this hearty recipe with all you luuux foodies! This is a really basic vegetarian soup made from yellow split peas. You can make it to your own taste by adding your favourite herbs or additional veggies of your choice. Add a sandwich or salad on the side and you`ve got a delicious, healthy and comforting dinner!

3 cups of vegetable broth
1 cup of dried yellow split pea
1 tablespoon of extra virgin olive oil
1 medium onion, chopped
4 cloves of fresh garlic, finely minced or pressed
1/4 teaspoon dried parsley
1/4 teaspoon thyme
1/4 teaspoon sage
salt and pepper to taste
1-2 drops of liquid smoke

1. Heat the olive oil in a large pot on medium heat. When the oil is hot, add the onion and garlic and cook for about 5 minutes, until the onion is softened. At this stage you may also add additional vegetables such as chopped carrots, celery or potato.

2. Add the broth, split peas, herbs and the liquid smoke. Be careful not too add too much liquid smoke - it`s very powerful stuff, but if you just add a drop or two you will get that delicious deep smoky flavour.

3. Bring the broth to boil over medium heat. Once it`s boiling, turn the heat down to low, cover, and let the soup simmer gently for 2-3 hours, until the peas reach your desired texture. Check the taste, and add additional salt and pepper if needed.
