I wanted to show you what I had for dinner on sunday. Yapingacho that is cooked potatoe with cheese. You fry it. I fry it with achote to give it thst lil red color. I havent made it for a while but they are delicious. Well I made Yapingachos with white rice, fried egg, pork chop and on the side pico de gallo and thst is a salad of chopped tomatoe, chopped red onion, avocado, some salt and olive oil.
