I made a batch of wild blueberry muffins for my boyfriend this weekend. A few times a week he`ll get a blueberry muffin at Dunkins when we get our morning coffee and I`m always astounded by the fat content in them alone. I don`t eat it, but I`m still astounded. I had a few different muffin mixes and my BF requested the blueberry (no surprise there)! Usually when I make prepackaged mixes I make them healthier - substituting our ingredients for healthier alternatives. But since these were for my boyfriend I decided to make them per the package directions. I rinsed my blueberries, emptied my mix into a bowl, added in the skim milk, the 2 eggs and when I went to add the oil -- rut, roh, Shaggy. We were out of oil - outside of olive oil. Errr!! I grabbed a container of no-sugar apple sauce and that became my "oil." I mixed them up, separated the batter into Pam spritzed muffin tins and baked. My boyfriend really enjoyed them -- so that made me happy!
