I made these cupakes last night during the hurricane that was blowing its way through my neighborhood. I thankfully did not lose power so to busy myself I made some cupcakes. I originally planned on making them today (Tuesday) but since I wasn`t sure what time I`d get home from work -- and since I was home early yesterday, I figured I`d use my time wisely.
I pulled out my funfetti Halloween themed cake batter. I basically followed the package directions, minus the oil -- I substituted for unsweetened apple sauce. I poured the batter into four cupcake liners and baked for 18 minutes. When done I let the cupcakes cool on top of the stove. When completely cooled, I took out my Wilson`s black and green mixed frosting I had purchased a few weeks ago. I screwed a star shaped decorating tip onto the tube and went off frosting. The frosting was the hardest part because squeezing the tube was proving to make my hands numb.
Overall, they turned out pretty good. The downside is I have 19 cupcakes in my kitchen and I`m not sure what time I`ll be getting home from work and running an errand with my boyfriend after work. Soo ... I may have to bring cupcakes into work tomorrow to leave for people to treat themselves to.
