What is your favorite breakfast food?:) I usually have oatmeal with soy milk and a fruit in the mornings. However, during the weekends, I will usually make an effort to fix a nice breakfast meal for me and my husband.
I made avocado and cheese crepes last Sunday and I am planning to recreate this breakfast meal again because it`s so yummy! I serve the crepes with a side of hash browns and half a kiwi. As you can see, we love drizzling our food in Thai sweet and spicy sauce. So Asian right!:)It`s really Yummy, you should try!:)
I have posted a recipe here so you can try it out, it`s really easy! You can even make a dessert version of crepes by using fruits like strawberry, kiwi, orange slices, banana and topped it up whipped cream. I spread some Nutella on my leftover crepe for my husband`s breakfast the next morning and he loved it :)
1 cup all-purpose flour
1/2 cup milk ( I substitute this with 1 cup of soy milk)
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
