Not all kimchi is red and spicy, as most people assume.
There are different types of kimchi and some are actually not spicy at all. Kimchi actually refers to fermented vegetables with seasoning, hence there are many different varieties of kimchi that fall under that description. The most common ones we know of are the fermented cabbages with red chili peppers.
There is actually another kimchi called white kimchi. This type of kimchi is not spicy at all.
Rather than cabbage, this type of kimchi uses daikon, which is a Japanese radish.
They soak it in a brine of vinegar with some chili peppers but the end result is the same. You get a white kimchi that is not spicy at all. In fact, it`s mostly sour!
Sometimes, you`ll also find carrots inside as they are fermented together.
I`m sure most of you have tried this at a Korean restaurant or KBBQ as it is a very common side dish.
