What`s your Stressed food?

My absolute favorite dessert is Raspberry souffle!
Whenever I`m having a less then good day I usually take the time to whip up a couple and I sit watch a movie (Peter Pan) and eat them.
These are my sad day treat. I almost always have the supplies to make it.
It`s really simple all you need is Raspberries, Sugar and Eggs.
You separate the eggs keeping both the whites and yolks. You put your raspberries in a pot with 3/4 cup of sugar and put it on a medium heat until the sugar dissolves (not until it boils!) Then strain all the seeds out of the raspberry whisk your egg yolks one at a time then let it cool. While that`s cool beat your egg whites to a soft peak. I usually do this by hand and it is quite the workout, but not impossible! and they form faster if you start with a cold bowl!
then gently fold the two together put them in your ramekins then into the oven at 350 degree`s and let them cook for about 20 minutes. When they`re done Enjoy!

I don`t get fancy with powder sugar I like them hot out of the oven!
