the other night i was craving for some papaya salad. sadly, i didn`t have a papaya on hand so i had to substitute. I used watermelon rind (the white outer layer of a watermelon). i know, you`re probably wondering "what, you used what?!" lol yeah, i did and it was soo soo good, as good as a papaya. the rind has a plain taste just like a fresh green papaya, so if your sauce for the papaya salad is good, then you`ll enjoy it as much as i did. i like my salad sweet and sour, spicy. =) you might think the watermelon rind might be too watery, but no, it actually wasn`t. you can tell by the photo, it wasn`t. I know cucumber salad can be, but this watermelon rind was not. i think its one of the best substitution for papaya salad. have you tried this before? or what other substitution do you recommend?
