One of my favorite, lighter meals to have when I want something filling yet still refreshing has to be spring rolls. I try to keep ingredients for it on hand for days I am craving for them. They are very simple to make, and the fun part it assembling it. I love filling mine with fresh vegetables and protein (usually a pork shoulder). What makes it extra delicious is the peanut, hoison dipping sauce. Definitely made my day!
