I went to a huge asian potluck with my family the other night. My mom made a vietnamese meat platter! And by made I don`t mean she assembled, she actually made the meat on the plate too.
The white pieces are cha lua (aka Viet ham) made out of pork, potato starch, and fish sauce. My mom added fresh peppercorn and steamed it while it was wrapped in banana leaf.
The red pieces are Nem, a Vietnamese Fermented/Cured Pork. There`s pork, peppercorns, chili, and garlic. This actually doesn`t cook but it gets cured in the fridge overnight, so tasty.
Then my mom made little roses out of veggie peels to decorate the plate. She garnished it with jalapeno too! This tasted amazing.
