Veggie Pasta Salad

I made this pasta salad yesterday to bring to a BBQ at my boyfriends coworkers house later yesterday afternoon. Unfortunately, I had made this but we never made it to the party due to a family emergency. Earlier in the week my boyfriend asked if I would mind making my "delicious pasta salad" as he calls it. It`s the simplest recipe that I concocted but he absolutely LOVES it and eats it with almost all meas (aside from breakfast) whenever we have leftovers. So needless to say, he`ll be eating a lot of this over the next few days since we have a ton of it in the fridge.

I start off by boiling up a box of Barilla pasta. I don`t use any other brand pasta whenever I make pasta salads because I find Barilla is the perfect consistency. It`s al dente which is what you want in pasta salad (well, with macaroni salad as well!) otherwise you`ll have a big sloppy mess on your hands once you incorporate ingredients and dressings. I then add in diced up green (or red) bell pepper, red onion, pieces of shredded carrot (this is optional it depends if I have it in on hand), a can of drained corn, a can of black beans drained and rinsed, and 1 cup of frozen peas. I add in one cup of light wishbone Italian dressing and I add in this pasta salad seasoning by McCormick. It gives it a nice color and it aids in enhancing the flavors of all the other ingredients.

I really like this because it`s full of veggies and flavor. This tends to be one of the sides I bring to BBQ`s if I`m not bringing a dessert. I`ll also generally make this in the summer time to have as a side with meals during the week especially during times where it`s going to be really hot and cooking anything indoors is just brutal.
