I made quiche yesterday because we had some frozen spinach that my mom wanted to use up. The recipe was pretty straightforward and I`m sure it can be adapted to use whatever vegetables you want to use (if you wanted to add in meat, I`m sure you could do that too). I grated cheddar cheese onto the bottom of a pie, then I mixed the rest of the ingredients and poured it in. With the spinach I added 1 cup of milk (too much! it spilled over), 3 eggs, nutmeg, ricotta cheese and salt and pepper!
It was really good-we finished it quickly!
