Who says Mexican food can`t be healthy? :) Mexican food is not about meat and seafood only and I find that a lot of Mexican food is not only vegetarian-friendly but extremely nutritious and not to mention good for you. Here`s a vegetarian fajita that my hubby ordered at our favorite Mexican restaurant in JC and it came with a side of freshly made guacamole, sour cream, salsa and rice, YUM! What I love most is the fresh sautee vegetables such as green peppers, broccoli, mushrooms and grilled pineapples that came with the Fajita set. I can`t get enough of Mexican food, do you love it as much too:)
