Vegan Rhubarb-Strawberry Oat Bars

I had some strawberries that I needed to use up, so I decided to make some healthy strawberry-rhubarb bars that I could eat for breakfast. After searching around for some recipes, I decided on a combo between these two recipes: from from The recipe I ended up with after combining the two above recipes (and using my own adaptations/tweaks) was this:
For the fruit filling:

  • 1 carton strawberries (about two cups), hulled

  • 2 stalks rhubarb

  • 2 tbsp dehydrated cane juice

  • 2 tbsp cornstarch mixed with 2 tbsp warm water

For the crust:

  • 1 cup oats

  • 1/4 cup quinoa flour

  • 1/4 tsp salt

  • 1/4 tsp baking soda

  • 1 tbsp ground flax mixed with 4 tbsp warm water

  • 1 tbsp almond milk

  • 1/4 cup coconut oil, melted

  • 1/4 cup dehydrated cane juice

First, I preheated the oven to 350 degrees F. Then, I put the strawberries, rhubarb, and dehydrated cane sugar in a saucepan on medium-high heat. When the mixture started to boil, I turned the heat down and simmered it for 10 minutes. Then, I added the corn starch and water, and simmered the mixture for a few more minutes, until it was thick, after which, I removed it from the heat. For the crust, I mixed the dry ingredients together first. Then I added the wet ingredients (including the flax mixed with water). I pressed the crust dough into the bottom of a greased 8x8 pan. Then, I poured the rhubarb and strawberry mixture on top, and baked the bars for 30 minutes. I let the bars cool for an hour, and then I enjoyed them! =D I have to say these bars were pretty good, but the best part was the filling! I found the crust to be a bit too thick, but I think that`s because I used a bit less fruit than the recipe called for. I wasn`t too fond of the quinoa flour in these tasted a bit musty, lol. Once I get a food processor, I will have to make some oat flour with it and just use that. Overall, though, I really liked these bars, and they made a pretty decent breakfast for me.
