I decided to make cupcakes for my boyfriend for Valentines Day. I had picked up a box of Duncan Hines Red Velvet cupcake mix about a month ago in hopes of bringing these to a party. That never happened and Ive since had this box sitting in the cabinet so I decided to put it to good use. Chocolate cake is my boyfriends favorite as is most of my families so I figured it would be best to make these and pass them out to get them OUT of the house. I whipped these up following the box instructions. Typically I would substitute the oil, eggs and water for healthier alternatives (apple sauce or diet soda) but when I calculated the Weight Watchers Points Plus there wasnt a difference between adding the ingredients VS not. I baked these up in some silicone heart shaped molds I had picked up at Target for $3/ea! After they cooled I placed them on top of Valentines Day decorated cupcake papers. I whipped up the cream cheese frosting (which is included in the box with a piping bag) and filled the cupcakes with about 1 tablespoon of frosting and then frosted the top of the cupcakes with the remainder of the frosting. All family that came by early Valentines Day had a cupcake and everyone said they were fabulous --- and I on the other hand didnt have a single one. Victory is mine!
