One of the most interesting dishes you will come across in the Utica NY region are Utica Greens. Its one of the best combinations of vegetables I ever had. You boil down escarole then fry it with roasted red peppers, onions, salami, and bread crumbs. You make sure you have a tad of oil in the pan for consistency. Using some fresh garlic to mix in helps add flavor. I do say its a great food choice, and in some cases you see restaurants add greens into chicken or steak. Most times the meat is filet down the middle and greens are baked in between.
