I picked up a pack of Betty Crocker Triple Berry muffin mix which all you have to do is add ½ cup of water to and bake off. I felt as though theyd be a good snack for my boyfriend and I especially since he sometimes go through a muffin kick (which lately he has been at Dunkin Donuts). I did bake these up and I feel they provide a good flavor, which is slightly tart thanks to the berries, but the texture is a little chewy. Thats to be expected when not using eggs or oil in a recipe, but thats completely fine with me. Im used to making recipes where I substitute eggs and oil, but the one thing I forgot to do was add in a pinch of baking powder. Baking powder tends to take the chewiness away when not using eggs and oil. These packages like this dont say that but it is a trick Ive learned in my healthy baking run.
These do taste yummier, cut in half, lightly toasted and spritzed with spray butter (or smeared with my fake butter). Yummo!
