I absolutely love tamales! My mom`s co-worker used to make them for us on occasions, but not as often anymore. I don`t think anything can beat those handmade tamales, but these Trader Joe`s Chicken Tamales were pretty tasty. They come in a pack of two for about $2, so a $1 per tamale is a pretty good deal. It`s a simple combination of chicken, cheese, and some sauce wrapped inside a corn husk. It tastes a little spicy and zesty, definitely a great after school snack. You can cook this in a rice cooker or you can microwave it. There are pros and cons to each cooking method. With a rice cooker the pro is that the corn husk shell will be more moist, but the con is that the chicken inside tastes a little drier and the cooking time is a little longer. The pro of the microwave method is that it cooks instantly, but the exterior part will taste dry. However, if you put a wet paper towel over it, it fixes the problem. So I would recommend the microwave method. These are quite delicious, and if you have a Trader Joe`s in your area, definitely give it a try.
