This happens to me quite often. I open the pot of concealer and realize Damnnn! This color is NOT my skin tone. Often do not just toss the product. Concealers that are a shade lighter than your skin tone can be used for other purposes!
One thing I tend to do with my too-light concealers is use it as a subtle highlight on my face. I place it on the highest point of my cheekbone. This gives a more natural highlight and an overall sculpted look.
Concealers can be used in a pinch to prime the eyes. I tend to use this method on the go when I forget my eye primer and suits me pretty well.
In small quantities, if my eyes look really dull and dark I will use a tiny dab of a color brighter than my actual concealer color. Keep in mind this is a VERY small amount!
