Tonights dinner: Chuleta y arroz con gandules

This was tonights dinner. I`m seriously one of those people who likes cooking things that don`t need to be monitored much. This is pretty easy to make and doesn`t take a lot of babysitting, nor time.

For my prk chops I just cleaned them and spinkled them with a bit of seasoning. I preheated the oven to 400, on broiler not bake. I set my timer on for 20 minutes. I let each side cook for 20 minutes and it was done.

For my rice I made yellow rice with pigeon peas. I know it looks more orange but thats what its called. For the rice I added a bit of oil to an empty pot, then added a drained can of pigeon peas. I leave that to cook for 5 minutes. Next I add the required amount of water and the required amount of rice. I put it on high so the rice can absorb the water quickly. Once there is almost no water left, I add a packet of seasoning which is what colors the rice. I mix it thoroughly so I don`t end up with multi colored rice. I lower the heat and leave it to cook for 25-30 minutes.

Being hispanic this one of my favorite meals. I can eat pork chops alone, or pretty much with anything.
