I was craving a nice salad earlier so I set out to make one for lunch. I had to use a chicken thigh instead of breast because that`s all we had at the moment. I didn`t realize just how big and thick chicken thighs are. It took forever for it to thaw out lol. Once it finally did, I seasoned it and threw it on my George Foreman grill. It took maybe 20 mins to cook. When it was done I pulled the meat off the phone and put it on a bed of baby spinach leaves. Then I sprinkled a bit of lemon juice on it and added jalapenos, cheese and Caesar dressing. Omg it was so good! I could totally eat another one for dinner!
