I`m not sure if this is just a New England thing, but these sandwiches have been a part of my pre-Thanksgiving life since I was a kid. Everyone that I know has these sandwiches and restaurants and sub shops even sell sandwiches like these (on ciabatta type sub rolls) all year around. In those types of environments they typically sell them calling them "Gobbler Sandwiches" or "Pilgrim Sandwiches". Basically you use your staple leftovers from dinner -- turkey, stuffing, cranberry sauce and you load it up onto some bread (toasted or untoasted).
I actually heat my stuffing and turkey through - about 35 seconds in the microwave to take the chill off and warm it up so it`s warm to the touch. I smear some light mayonnaise on either side of the bread, layer on my turkey, add my stuffing -- I then either add salt and pepper (usually just pepper) and smear some cranberry sauce on the last piece of bread and put it all together. Absolutely delicious!
I had this for dinner yesterday and I had it for lunch today. Seriously -- BEST part of Thanksgiving hands down!
