<div dir="ltr">Hello there all food lover, gosh I haven't posted all week. So I decided to take a trip over at my friend's house last saturday and I was treated to some pork souse.
<br />Souse is a sauce like soup that can be made with either chicken, turkey, conch, pork, lamb with a mixture of vegetables and most importantly all spice. <br />No souse dish wouldn't be completed without some Johnny cake, which is a hard tasty bread. <br />The souse in the photo was pork souse cobsiting of pig tail, ears and pork picnic. Instead of Johnny cake , home made dinner bread was used and it tasted great.
<br />Recipe for Johnny cake <br />
<br />4 cups all purpose flour
<br />4 tsp baking powder
<br />½ cup sugar
<br />3½ Tbls oil
<br />1½ cups water
<br />1 tsp salt
<br />3 Tbls melted butter or magarine
<br /><br />mix all ingredients together into a thick batter. Add to a greased pan and bake for 25 minutes at 450F.
<br /><br /><br />Souse ingredients<br /><br />3lbs Pork
<br />1 Yellow Onion
<br />2 Medium Stalks of Celery
<br />3 Garlic Cloves
<br />2 Tbsp Whole Allspice
<br />2 Limes
<br />Dried Goat Pepper
<br /><br />Pre boil meat with salt and host pepper, and chop vegetables into small pieces and add to the pot of meat as it boils down. Add all spice and lime and let it boil for about 20 minutes. <br /><br />
