The secret to great pasta is making your own. There is nothing quite as good as your own, homemade freshly cut pasta. For generations, people have made their own pastas from scratch, but in our modern world we have sacrificed taste and quality for time and food with no taste. To make your own homemade pasta, make a mound of flour with a well in the center. Add a beaten egg with some salt and a little olive oil. Pour the mixture into the center of the flour well and mix gently with your fingertips, pulling a little of the flour into the center a little at a time until you have a nice dough. Knead the dough for five to ten minutes and let it rest. Do not put the dough in the refrigerator. The dough should rest for at least 30 minutes and then roll out flat, rectangle squares for your pasta machine. You dont need a pasta machine, but it will make your noodles much more uniform and easier to handle. Cook your pasta in a few quarts of salted water for six to seven minutes or until it is al dente. The pasta is good and does well with a rich and hearty tomato sauce, or just garlic and olive oil.
