My favorite restaurant to go to is the Keg. When I tried their garlic mashed potatoes and Thai chicken, I knew I had to run home to try to replicate it. My version of the Kegs Thai chicken is on the sweeter side, but if Im feeling brave to have something spicier I will add a dash of chili powder. Moreover, the ingredients for this dish are as follows:
1. chicken breast
4. 1 potatoe
5. half a clove of garlic
6. ¼ cup milk
7. ¼ cup heavy cream
8. a dash of parmesan cheese
9. VH sweet Thai chilli sauce
10. mushroom and green, red, and yellow peppers
Cut your potato into even pieces and put them in a pot of boiling water. Now put the half clove of garlic into an oven at medium heat. When the potato and garlic are preoccupied, prepare your chicken by seasoning it with salt and pepper, and cut up your mushroom and peppers into slices. After you preparation is completed, put some oil into a pan and preheat it on medium heat. Throw your chicken in to a pan and cook it for about 8-12 minutes on each side (depending on the thickness of your meat). Take it out of the heat when it is finished cooking and leave it to rest. Now your garlic and potato should be done. Take out the potato and drain it and peel your garlic to release the golden gems. Infuse the peeled garlic with the potato and mash the potato in a pot on medium heat. After you mashed your potato to your liking, add your cream, butter, salt, pepper, and parmesan cheese and stir it in until you have achieved the thickness you like. After your mash is done, put it aside and take out the same pan you cooked the chicken in and deglaze it with some water; add in the mushrooms and peppers into the pan and cook the veges until it is half cooked. Take out your VH sweet Thai chilli sauce and add some into the mushroom and peppers and cook the veges until they are done (the sauce should start to caramelize a little). Now take the mushrooms and veges off of the heat and take out a plate to serve. When serving make a base of garlic mash potatoes and add the chicken on top of the mash and then drench the dish with the flavourful mushroom and pepper infused Thai chilli sauce. Enjoy =).
