Today was nice and chilly outside. For most of the day it was around 47 degrees. We spent it outside at the park playing baseball and running through all the fallen leaves. When we got home we were starving and wanted something that wouldn`t take a ton of time to cook. One of the fastest meals I know is tacos/nachos.
I cheated by buying a seasoning packet for the beef. Ah well. I browned up the meat, added the seasoning, a bit of water, and let it all cook together and thicken up. In a separate pan I heated through some Mexican style refried beans. I put our taco shells on a cookie sheet and heated them up so they`d crisp up. They were in the oven for about 5 minutes on 350 degrees. Once that was done everything came together real quick. My husband actually fills the taco shells. Me and our son break them in half and use them as nacho chips.
I layered some of the beans at the bottom, then a layer of the meat, some medium picante sauce, 2 Taco Bell packets of their mild sauce (I get a lot and then hold onto them when I happen to eat there... I really like their sauce), some sour cream, and some Mexican shredded cheese blend. I just stuck my halved taco shells into the pile and scooped up the food as I ate.
This was super quick but tasty. Every once in a while it is so nice to just whip together some tacos/nachos and not worry about spending a lot of time preparing and cooking the meal. We used to have taco nights a couple times a month...not so much anymore.
