Swerving Off The Healthy Road: White-Chocolate Blueberry Oatmeal Cookies

Hey you guys, I wanted to share this recipe with you its so AMAZING!

makes 2 dozen cookies


1 stick of unsalted butter, softened
1 large egg
2/3 cup light brown sugar, packed
1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 cup rolled oats
1/4 cup dried blueberries
1/4 cup white chocolate chips
1/4 chopped pecans (optional)


preheat oven to 350 degrees. cream together butter, brown sugar, egg and vanilla. add in flour, baking soda and salt, mix well. add oats and the rest of the ingredients.

scoop onto a baking sheet lined with parchment paper - heaping tablespoon sized. i opted not to chill the dough first, because i wanted a flatter cookie. if you want a thick cookie, stick in the fridge or freezer for a few hours before baking.

bake for 10-12 minutes or until the edges are just about browned and the middle doesnt look gooey. allow to cool on the baking sheet for a couple minutes before transferring to a cooling rack.

also, if you are not baking cookies on parchment paper, youre definitely doing it wrong.
