Changing things up a bit, and making my chicken dish a little bit more sweet this week. I`ve been pretty consistent with keeping my seasonings and marinades simple (salt and pepper). but yesterday I had a craving for something a bit more sweet and spicy. Changing up your seasonings and marinades every once in a while really keeps cooking interesting, and making eating even more fun.
So I used an asian inspired recipe that had a good balance of sweetness with a bit of a spicy kick to it also. This one is a family favorite recipe, but you can also find bottled marinades in the asian section at most grocery stores. Just adjust it to your liking.
Slather a bit of marinade onto the chicken (leaving the skin on for added flavor) and let it settle for 10-15 minutes. Then toss it in the oven on a higher rack and roast for about 20-25 minutes. Serve over a bed of greens or some jasmine rice, and there you have it!
