Who knew sweet potato leaves are edible and can be so delicious too?:) When I was growing up in Asia, my mom and grandmother would usually stir-fry these sweet potato leaves with dried shrimp, garlic and shrimp paste and we`ll be happily eat it with rice...and I mean bowls and bowls of rice:) You can imagine my delight when I found it at the Asian grocery store and I almost wanted to buy a box full of these precious sweet potato leaves because I know my hubby would love it too and also because I don`t usually see them being sold at the store:) Too bad, these vegetables don`t last too long and it stays good in the fridge for a max 3-4 days. All I did was stir fry this plate of leaves in vegetarian sauce and it was good to go and extremely tasty!
