So every year on Easter Sunday my family ALWAYS has this dish. It is the sweet eggs with pork. My mom typically makes it but since she was busy she asked me to make it this year. It`s quite simple. The first thing that you do is you hard boil eggs. (We usually use whatever the kids had gotten from their Easter egg hunt.) Peel them all and then pour soy sauce to cover the eggs, that is how they get the brown color. Then I got some pork cut them up to bite size pieces and seared them in the pot. Let them get a nice golden brown color. Then add in about a cup and half of granulated sugar into the pot with the pork. Stir and once the sugar is dissolved, add in water to fill half the pot. Then add in some lemon grass and lime leaf and let it come to boil. In the mean time cut carrots and potatoes to add in. Once the pot is boiled and the pork is cooked, add in the eggs and all of the soy sauce. Let it come back to a boil, then add in the carrots and potatoes. Once the carrot and potato is soft taste, and add in salt and chicken broth to taste. Then add in some green onions and walah you have this marvelous dish! I hope that you guys enjoy.
