It has been a while since I made sushi for my parents, I know they love eating sushi and I can put all the ingredients that they like whenever I make them some. My parents love everything healthy so I usually use brown/red/multi-grain rice and plenty of fresh vegetables such as carrots and cucumber. It is a little more troublesome to roll up the sushi if you are using multi-grain rice as oppose to regular sushi rice since they are less sticky but if you are trying to eat a little healthier like my parents are, I highly recommend it:)
