Summer Salad

Today our temperatures are nearing 80, which is beyond high for the Midwest in March. I am wearing a sun dress and have all my windows open in the house... and for lunch was craving something refreshing and not heavy. I had the ingredients for a salad I saw MissChievous feature on her second channel. I decided to whip it together. You can see her recipe I followed it for most of the ingredients but changed it up to suit my own tastes. Instead of just 1 apple, I used two. I used a gala apple and a green granny smith apple. I liked the idea of the sweet and tart combined. For my beans I used Great Northern white beans and Red beans. Also, I used quite a bit more lemon juice and yogurt. I wanted more creaminess from the yogurt and I wanted more freshness/sourness from the higher amount of lemon juice. Also, I think she used an orange bell pepper, I used a red one. OH, and I didn`t use a red or white onion. Instead I used green onions. I ate mine with a hunk of sour dough bread. Let me just say, if you are looking for something healthy and refreshing, this is it. I even chilled it a bit in the fridge before eating. It is delicious! It has crunch to it, which I like. It has a bit of earthy, creaminess from the beans and yogurt, yet is light and fresh since it is mostly fresh fruits and veggies that are kept raw. I`m going to be making this a lot through the spring and summer, I`m certain of it.
