during the summer, i tend not to do a lot of heavy baking, as in cakes with loads of frosting and too much sugar. it makes me feel a lot grosser and loaded down with sweetness. i much prefer natural sweetness like fruits and what not. (i`m not a big fan of baking in the summer at all, actually, because the heat from the oven is just too hot!)
in the cupcakes above, i made regular vanilla cupcakes but instead of topping them with frosting, i used sliced nectarines. the sweetness of the nectarines was just perfect! i drizzled a little melted dark chocolate on top for the extra bit of sweetness. and because i love chocolate and i had to have it hehe :)
overall, these are a nice way to make a nice, refreshing baked treat in the summer. i`m really glad i did this even though it`s not something i`d typically go for. the combination of flavors is slightly bizarre but still good.
word of caution though: wash the nectarines but let them dry! when you slice them, beware of extra juices. they`ll seep into the cake and make it soggy! i used a paper towel to soak up the extra moisture to keep the cake nice and dry and fluffy :)
