HI, I baked again today. Lately I`ve been trying out recipes and I must say, it`s pretty fun but fattening..lol. So here`s the recipe that I wanted to share. It`s supposed to taste like those jumbo cookies you find at Safeway. Does it, not sure, haven`t tried those cookies but they are still good.
1 cup butter, unsalted
1cup white sugar
2 eggs, lightly beaten
1 tsp vanilla
3 cups flour
2 tsp baking powder
1 tsp salt
colored sugar (optional)
In a bowl, cream the butter and sugar. Beat in the eggs and vanilla.
In a second bowl, combine and mix well the flour, baking powder, and salt. Stir flour into butter mixture 1 cup at a time, Chill dough for 3 to 4 hrs.
Roll out dough and cut into shapes with cookie cutters or knife. Brush with milk and sprinkle with colored sugar. Bake on a sheet pan or a parchment lined sheet pan in a preheated 350 F oven for 10-15 minutes depending on the size of the cookie. Remove cookies to a rack to cool completely.
You don`t really have to use cookie cutters. What I did was rolled some into a log and just cut it into slices. I brush some milk onto mine and instead of colored sugar, I sprinkled some plain white sugar on it. You can omit this step if you think this might be too sweet for you.
