Are you tired of steaming, boiling and stir frying your vegetables? Well, as much as I try to eat healthily, a little frying won`t be that bad for you right?
Stuffed vegetables (Yong Tau Foo) is a very well know Hakka dish in Asian countries and I used to love eating it when I was growing up. You can use pretty much any kind of vegetables you like and as you can see here, I used a variety of veggies such as eggplant, okra, orange bell pepper, bitter gourd and tofu puffs. Traditionally, these stuffed vegetables are stuffed with ground pork but I managed to find a bag of vegetarian chicken paste at our Asian store so YAY! What I did was just slice up the veggies and stuffed them to the brim with the vegetarian chicken paste before frying them. You can also throw everything in a pot and make a soup, it`s pretty good too!
