I made these in my crockpot. It was super easy because you don`t have to brown the meat, just mix the meat with some cheese, cooked rice (I made the microwavable bag type), enchilada sauce, onion and stuff this in the green peppers. The directions said to cook it 6 hours on low but my crockpot gets hot quick so I only did 4.5 hours and they were cooked good. I did do a meat thermometer before eating to double check that the meat was well done. This is one of my new fave recipes because it is so easy and requires little preparation. I put this together on my 1 hour lunch break and had dinner when I got home!
