I am getting a bit behind on several of my posts... this isn`t something I made tonight, but all the same it is worth sharing. This was a delicious dinner we had. It is another crock pot dinner. Some of you may know how much I enjoy using my crock pot to cook meals in. It is just so easy. You pretty much toss your ingredients in and let it go. Come back to it many hours later and your dinner is ready for you. This is the ideal way to get dinner on the table for working women/men. (or just busy folks!)
For this meal, I put the roast into the crock pot and then poured in a dry onion soup mix packet, a can of beef broth, a can of peeled and diced tomatoes, a bag of frozen and cut green onions, a sprinkling of pepper, and a hefty sprinkling of garlic powder. I didn`t add any salt because the broth and the onion soup mix had decent salt in them already. I put the lid on and let it go. This cooked for around 9 hours.
If you want more crisp green beans wait until the end to put them in. My husband doesn`t like any life left in them so I always put them in at the very beginning. So long as you aren`t stirring things a ton, they won`t turn to mush and break apart. You can serve this with some mashed potatoes, rice, or a dinner roll. All would be delicious. I chose to serve mine with an Alexia whole grain dinner role.
