Steamed Veggies and Shrimp

Ive been really busy as of late, so its been difficult to watch what Ive been eating. Often, I dont have more than an hour between work and volunteering at my community centre, so making sure dinner is quick and easy has been really important. But at the same time, I want to make sure dinner is healthy as well!

One of my saviours has been these frozen steamed veggies my mom bought for me. I can come home and pop some on a stove top for 6-7 minutes with some water and I have steamed veggies ready to eat. Having the veggie ready so quickly has been great, and I usually just find what leftovers we have in the fridge and make some stir fry. On this occasion, we had some leftover shrimp. Since the shrimp was already cooked, I didnt want to overcook them, just heat them through. So once the veggies were ready, I drained the water, and added spoonful of a spicy stir fry sauce we have at home and made sure all the veggies were covered in the sauce. Next, I added the shrimp and continued to heat everything for a minute or two before transferring to a plate to eat!

This would have been ideal with some rice or something, but there was no time for that LOL. Even without rice, it was delicious and the whole thing didnt take more than 10 minutes. I only made enough for myself, but I easily could have made this a dish for my whole family in the same amount of time!
