Steak Fajita

The other day I made chicken fajitas for dinner. Well, we ended up with left overs. Instead of having it go to waste I decided to cook up some steak and add that to change it up a bit and have steak fajitas instead of just chicken. I have posted about my chicken fajitas in the past, I believe. I don`t often do steak. When I do, I go very simple on my preparation of them. I decided I wanted to change it up and followed a marinade recipe by Laura Vitale from Laura in the Kitchen. (look her up on youtube, she has some great recipes).

In the marinade I combined some veggie oil, salt, cumin, ground chili pepper, cilantro, garlic, jalapeno, lemon (I think she used lime)...and I think that was it. She also had scallions which I forgot to put into mine, lol! oh well.

I put the steak into a large zip lock bag with the marinade and left it in the fridge for about 6-7 hours. I just cooked it in a large pan. I considered using my cast iron skillet as she did, and it probably would have given me a better sear, but I didn`t want to fuss with the clean up of a cast iron skillet. They can be a pain at times.

I put some of the steak, shredded cheese, sour cream, and the onion and pepper mix from my left overs into a flour tortilla. I only ate one because I`m not too terribly hungry. But, it was good. Maybe a bit strong on the cilantro (and I didn`t even use as much as she did. I`m just not a big cilantro fan).
