Spinach amp Bean Burrito

I had found a recipe for burritos that were a bit more healthy than the usual ones. It sounded like it would be good enough and got good reviews, so I made some. I did change it up a bit, though, and added to it. There really isn`t much to it, so it is something that everyone can make.

I started with fine diced onion and minced garlic in a skillet over medium heat and a bit of oil drizzled in. I let those ingredients soften a bit and then I added in a couple handfuls of spinach. I let that wilt down and then I added some salt and pepper. Next, I took some canned black beans that I rinsed off and put them into the mixture. I let that sit for just a couple of minutes to warm through. Once I was satisfied that everything had warmed up, I spooned a bit of it into the center of a flour tortilla, sprinkled in some cheddar cheese, and a spoonful of medium picante sauce. I rolled up the tortilla and put it into a baking dish that was sprayed down with a bit of cooking spray. Once I had filled the dish, I spooned out more of the picante sauce over all of them and sprinkled more of the cheddar cheese on. Finally, I put them into a 350 degree oven for 20 minutes. I served them with a bit of sour cream over top.

ABSOLUTELY delicious! You don`t really taste the spinach in them, but the health benefits are still jam packed into them. This was such a simple meal that tasted good. It is going into my rotation of dinners/lunches.
