I made spicy shrimp with pineapple for dinner tonight and it was super yummy. This dish literally takes roughly 15 min to make and only calls for a few ingredients. This recipe is good for low GI and low carb diets. This make enough for two people when served with a side. It cans also be divided up for two small meals if you eat multiple small meals through out the day.
1 cup Bean Thread Noodles (roughly 2 bricks)
15-20 Uncooked Medium Shrimp (if frozen soak them in cold water they will thaw fast!)
1 can Pineapple Chunks (in its own juice, no added sugar)
1/2 tsp. or more garlic powder (to taste)
1 tbsp. or more korean chili flakes (if you like it hot use more)
2 pinches of salt
Fill a small bowl w/ hot water doesn`t have to be boiled just really hot from the tap and soak 2 bricks of bean thread noodles for 5 min or until soft. remove from water and set aside for later.
Open can of pineapple and drain juice into a cup for later.
Coat bottom of a medium sized frying pan with olive oil and heat up on medium-high. Place the peeled shrimp on one side and immediately add korean chilli flakes garlic powder and salt. After about 2 min flip shimp on to other side and continue cooking for 2 min. After the shrimp is done remove them from the pan into a separate dish. Don`t dump out the juices while doing this.
** Note: When shrimp form a C-shape they are perfectly cooked and shrimp that have twisted into an O-shape are grossly overcooked.***
Place the pan back on the burner while increasing the heat up to high, add the pineapple juice. The left over seasoning and juice will start to bubble and froth thats normal, as we`re making a glaze. The whole pan should be covered in frothy bubbles when the glaze is done roughly 5-6 min. Add bean thread noodles and toss w/ the glaze. Remove from pan.
Add pineapple chunks to pan and cook for about 2-3 min stir occasionally. Remove to toss with shrimp and noodles.
