Spicy Noodles with Fried Tofu

This is what I had for lunch yesterday. I love eating noodles and I had bought a big pack of vermicelli noodles at the Asian Market the past weekend so I was like I might as well start using it up.

Cooking noodles is so fast and easy and I just love it! For this noodle dish I used skinless boneless chicken thigh chopped up into bite sized pieces, carrot, onion, napa cabbage and spring onions. For the sauce I used lite soy sauce, ketchup and sriracha hot sauce. I love sriracha!!! I added some garlic powder, chicken boullion cube and pepper for seasoning.

After I cooked the noodles I chopped up a square of tofu into pieces and fried it. I put it on top of the noodles because I did not want it to break if I mixed it in the noodles. I put some extra sriracha sauce on the top of my noodles and VOILA! DONE! =D
